Job Overview
We are currently seeking a Senior Sous Chef - CDC for a full-time position in 5 Star property by the name GRAND DRAGON based in Leh. The ideal candidate will have 7 to 10 years of professional experience and be operating at a senior level. This role demands expertise in Asian cuisine as a mandatory skill along with various other culinary proficiencies.
Qualifications and Skills
- Expertise in Asian cuisine (Mandatory skill) is crucial to successfully managing kitchen tasks and ensuring authentic preparation.
- Strong foundation in culinary arts enabling the creation of innovative and high-quality dishes for a diverse clientele.
- Proficient in menu planning by considering ingredient seasonality, dietary restrictions, and overall kitchen capabilities.
- Effective at inventory management to ensure cost efficiency, reduce waste, and maintain stock levels for smooth operations.
- Demonstrated team leadership skills to mentor and guide kitchen staff, cultivating a productive working environment.
- Comprehensive understanding of kitchen operations to seamlessly coordinate tasks that contribute to food quality and service standards.
- Experience in cost control measures that help optimize resource utilization and contribute to the profitability of the kitchen.
- Capable of recipe development to enhance the menu offerings while maintaining signature flavors and presentation quality.
Roles and Responsibilities
- Assist the Executive Chef in handling overall kitchen operations and management efficiently and effectively.
- Ensure the preparation of high-quality dishes that adhere to brand standards and customer expectations.
- Participate in the design of seasonal and innovative menus tailored to the restaurant's audience and regional preferences.
- Oversee kitchen staff performance, providing necessary training and monitoring daily tasks to ensure excellence.
- Manage the procurement process, optimizing inventory and overseeing that supplies match consumption needs.
- Coordinate with the procurement team to maintain quality control over ingredient sourcing and supplier relationships.
- Implement and adhere to all safety and hygiene regulations to ensure compliance and secure working conditions.
