Menu Costing

·       Execute directives of organization’s mission, goals and objectives and demonstrate them through ongoingand direct motivation, communication, group dynamics and leadership

·       Plans menus for Café Signum all food outlets in the across group.

·       Work with the Chefs to develop and cascade Signum culture of Food and Beverage across the portfolio of hotels

·       To ensure that approved menu is in place in all units and coordinates the work of Unit based Chef’s to assure that  food preparation is economical and technically correct and within budgeted cost goals.

·       To ensure that standard recipes and techniques for food preparation and presentation which help to  assure consistently high quality and to minimise food costs; exercises portion control for all items served and assists in establishing menu selling prices.

·       Should insure that Brand Recipes are being strictly followed at units with skillful preparation.


7-10 years of experience in Hospitality Industry


Skill Set:    

Business Sense, culinary expertise, excellent presentation skills, organizational skills, and  leadership andnegotiations skill, fair computer knowledge
